Description
Chimichurri is an Argentinian sauce used across many different cultures, adding that perfect finishing touch to meat, poultry, & fish/seafood (all usually grilled). It is made up of parsley and can vary with additional herbs and spices.

- 1 1/2 cups fresh parsley
- 1 1/2 cups fresh cilantro
- 1 shallot, diced fine
- 3 garlic cloves, minced
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- 1 teaspoon red pepper flakes
- 1/2–1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Mince the garlic and dice the shallot into very small pieces. Sprinkle 1/4 teaspoon of kosher salt onto the minced garlic, and use the side of your knife to mash the garlic and salt together, turning it into a paste.
- Place the cilantro and parsley on top of the shallot and garlic and begin to chop the herbs until they are very fine and mixed with the shallots and garlic.
- Place mixture into a bowl and add red wine vinegar, olive oil, red pepper flakes, salt (1/2 teaspoon at a time, taste for seasoning) and freshly cracked black pepper. Mix with a fork until everything is well combined. Taste the sauce for seasoning, and adjust as necessary. Enjoy!
