Ingredients

Scale
- 3 avocados
- 1/2 cup cilantro
- half a small red onion
- half a jalapeño pepper
- 5 grape tomatoes
- juice of half a lime
- kosher salt
- ground black pepper
Instructions
- Slice avocados in half, lengthwise, and rotate them around the knife. Twist to separate the two halves, then take a sharp knife and hit the pit with the blade until it sticks. Twist the knife so the pit pops out of the avocado.
- Scoop out the avocado flesh into a bowl and start to mash it up with a fork. You don’t want it to be smooth at this point, just a little chunky.
- Rough chop your cilantro & finely dice the red onion, jalapeño, and grape tomatoes. Add all of these ingredients into the bowl with the avocado.
- Squeeze the juice from half of a lime into the bowl with all of your ingredients and season with salt and pepper to taste. Start with a teaspoon of salt and adjust as needed.
- Mix everything together, mash up the avocados a little more until you reach the consistency you like, and serve or refrigerate in an airtight container.
Notes
Guacamole typically can last up to 3 days in an airtight container.
The jalapeño can be omitted if you have sensitivity to spice. You can also remove the ribs and the seeds of the jalapeño to take the spice down a couple of notches.
