Sometimes, the simple things in life make me the happiest. Guacamole always falls under that category for me. With just a handful of ingredients, you can create the perfect accompaniment for tacos, fajitas, tortilla chips and so much more. I include jalapeño in this recipe for a little kick. You can omit it if you’re sensitive to heat, but it isn’t overly spicy & the avocado helps to mute the heat a little.
Picking Perfectly Ripe Avocados
Choosing ripe avocados was a little tricky for me a few years ago, but I figured out what I should look for in each one. You can start by pressing the top and bottom of the avocados to see if they give a little. If they’re too firm, they’re not ready, and if they’re mushy they’re overripe. You can also remove the little cap/root from the top of the avocados to see if it’s green inside, however I don’t rely on this method as much as I do the press test.
Lets Make The Best Guacamole Ever!
This Guacamole recipe is simple and comes together in about 15 minutes. Here are the steps:
- Slice avocados in half lengthwise and rotate them around the knife. Twist to separate the two halves, then take a sharp knife and hit the pit with it so it sticks. Twist the knife, and the pit should pop right out. Scoop out the avocado flesh into a bowl and start to mash it up with a fork. You don’t want it to be smooth at this point, just a little chunky.
- Rough chop your cilantro & finely dice your red onion, jalapeños, and grape tomatoes. Add all of these ingredients into the bowl with the avocado.
- Squeeze the juice from half of a lime into the bowl with all of your ingredients and season with salt and pepper to taste. Start with a teaspoon of salt and adjust as needed.
- Mix everything together, mash up the avocados a little more until you reach the consistency you like, and serve or refrigerate in an airtight container.
Tips For Getting The Best Results:
- Guacamole typically can last up to 3 days in an airtight container.
- The jalapeño can be omitted if you have sensitivity to spice. You can also remove the ribs and seeds of the jalapeño to take the spice down a couple of notches.
